Whenever I see the recipe for Angel Biscuits, I will always think of Virginia....What Are Angel Biscuits?
Angel biscuits are made with three leaveners: baking powder, baking soda, and yeast. They're the exact opposite of the heavy hockey puck biscuits everyone dreads. Using three leaveners makes angel biscuits so light and fluffy, it's as if they could float up to heaven, like angels—which, of course, is where the name came from.
Teaching her home ec students how to cook Angel Biscuits was one of Virginia's home economic projects....but then allowing those students to travel throughout the school once they had baked serving them while they were hot to the faculty and staff was also one of her projects.....Just as she herself exemplied kindess and grace, she used that project to teach her students the same......
